I love Italian food because is honest. The recipes contain a few ingredients, so only ingredients of very good quality can give you a delicious dish.

Cappuccio in insalata

Cabbage salad

  • 1 light green or white cabbage

  • a bit of extra virgin olive oil

  • wine vinegar

  • pepper

  • a pinch of fine salt


Slice a light green or white cabbage in stripes, as thin as you can. Place the sliced cabbage inside a bowl, add some extra virgin olive oil, abundant wine vinegar, abundant pepper and a pinch of salt. Mix thoroughly and let it rest for at least three-four hours in the fridge. Enjoy it as a side dish!
