I love Italian food because is honest. The recipes contain a few ingredients, so only ingredients of very good quality can give you a delicious dish.
Crespelle
Typical salty pancakes from Italy
450 g milk
200 g flour
2 eggs
20 g butter
4 g fine salt
Place the eggs into a bowl and add the milk. Mix gently with a whisk while adding the melted butter (lukewarm). Add the flour and the salt. Continue to whisk until the ingredients are well mixed.
Heat a pan over a moderate heat. Use a ladle to pour some batter into the pan, tilting the pan to move the mixture around to form a thin and even layer. Cook until it becomes of a golden/brown colour, then flip it and cook it on the other side. Continue until you finish all the batter you prepared.
Fill the pancakes with what you prefer. For example with patè di carciofini (small artichoke pâté) or crema di porcini al tartufo (Boletus mushrooms cream with truffle). Instead, you can also use ham and cheese or... what inspires you! Just remembers that Italians would not use too many ingredients ;-) Close the pancakes to form a "half moon" shape.
Take a baking tray and cover its surface with a bit of extra virgin olive oil and breadcrumbs. Place Crespelle on the baking tray, drizzle with extra virgin olive oil and sprinkle with grated Parmigiano (Parmesan) or pecorino stagionato (matured sheep cheese) & thyme. Bake them at 190°C without ventilation for 10 min. Enjoy!
