I love Italian food because is honest. The recipes contain a few ingredients, so only ingredients of very good quality can give you a delicious dish.
Fortaie alla Bruna
Typical pancakes of Trentino after Bruna's recipe
2 eggs
200 g flour
500 mL milk
50 g butter
a pinch of fine salt
Place the eggs into a bowl and add the milk. Mix gently with a whisk while adding the melted butter (lukewarm). Add the flour and the salt. Continue to whisk until the ingredients are well mixed and let the batter rest for at least 30 min.
Heat a pan over a moderate heat. Use a ladle to pour some batter into the pan, tilting the pan to move the mixture around to form a thin and even layer. Cook until it becomes of a golden/brown colour, then flip it and cook it on the other side. Continue until you finish all the batter you prepared.
Let the Fortaie cool down, then spread on them some chestnut cream and, if you want, serve them with chocolate sauce and whipped cream - enjoy!
Alternatively, you can spread on them some sour cherry jam.
