I love Italian food because is honest. The recipes contain a few ingredients, so only ingredients of very good quality can give you a delicious dish.
Polenta alla Dario
Maize porridge after Dario's recipe
500 g maize flour from Storo
(or another maize flour for Polenta)
2 - 2.5 L water
18 g coarse salt
1/4 glass of red wine
Boil the water inside a big pot. When the water starts boiling, add the salt, the wine and mix with a spoon. Now you can pour the maize flour, little by little, inside the boiling water, while moving a whisk with circular movements to avoid the formation of lumps. When the porridge starts to be semi-solid, use a big spoon to stir. Let the Polenta cook at low - medium heat for 45-60 min. Stir often with a bog spoon, always in the same direction. The Polenta is ready when it detaches easily from the walls of the pot.
Pour it on a cutting board where you placed a kitchen cloth, wrap it in the cloth and wait a few minutes that it becomes solid. Take a slice and enjoy it!
